blackberry peach crisp with oat flour


guys. i am freaking out over here! i have no kitchen and it is eating away at my soul.

not dramatic at all.

but for real.

i might have packed a good many kitchen utensils in my suitcase but it's not helping me right now with the lack of an oven.

so, the kitchen piracy continues... whose kitchen is next?? ...

here's a recipe from last week that my friend lindsey and i put together in five minutes. after much deliberation over going to the gas station for ice cream or not, we decided not. we couldn't be bothered with such frivolities. it was at this point that we realized we could make something pretty fast. and we did. and it was delicious. we saw a recipe similar to this one on yummly and made a few changes.

it's seriously the easiest thing in the world. almost embarrassing.

but i like this so much i might make something very similar to it tomorrow when i steal a new kitchen. you'll have to wait to see! after much beethoven five and another orchestra concert tomorrow, i sleep.

blackberry peach crisp
serves 4

oil (cooking spray)
1 cup blackberries
1 cup chopped peaches
2 tsp orange marmalade
2 tsp water
1/2 tsp vanilla
3 tbs oat flour
3 tbs oats
2 tbs brown sugar
1 tbs olive oil
1 tbs honey
1 tsp cinnamon

- spray or coat 4 ramekins and preheat the oven to 375. mix together berries in a small bowl. combine marmalade and water to mix with fruit and vanilla and divide into dishes.
- combine remaining ingredients and evenly distribute as a topping over the fruit. put on a baking sheet and bake for 15 to 20 minutes or until bubbly. serve warm... with ice cream!!!

oat flour biscotti with dried cherries and pistachios



so here's a little creation that i made with my friend ms. cherry last week (inspired by epicurious.) i think it's cute that it has cherries in it, you know... her last name is cherry. yep. cute.

surprisingly, the oat flour did really well. it wasn't difficult to make. it was a little crumbly. but had a very delicious crunch. wonderful with tea or espresso!

i know it's a bit of a holiday treat but i say eat what you like anytime, friends.

cherry's biscotti
makes approx. 16 pieces

1 1/4 cups oat flour
1/2 cup sugar
1 1/2 tsp baking powder
dash of salt
1 large egg
1.5 tbs olive oil
zest of one lime
1 tsp vanilla
dash of almond extract
1/2 cup dried cherries
1/2 cup shelled pistachios, unsalted

- preheat oven to 350. line baking sheet with parchment paper or prepare with some form of grease. combine first four ingredients. in a separate bowl mix together egg, oil, zest and extracts. combine both mixtures and fold in dried fruit and nuts.
- roll dough into a long log, then flatten to a width of two inches. bake for thirty minutes or until browned, rotating sheet halfway through. remove from oven and allow to cool on a rack for 15 minutes, after which time you can reduce the oven temp to 250 and transfer the biscotti to a cutting board to cut into pieces with a serrated knife.
- then lay the pieces cut side down on the baking sheet once more to bake for 40 minutes, again rotating halfway through. serve when cooled off a bit and store in airtight container.
