who doesn't love an easy chicken recipe?

hey chicken. i'm going to eat you.

check these beauties out! don't you want to make something with them?

i'm not a huge proponent of carb loaded meals, especially those with white flour. BUT sometimes you just gotta roll with it.

in this recipe, adapted from america's test kitchen, we combine a few simple ingredients. and in just a little bit of time, we've got quite a tasty casserole dish! my suggestion is to load it up with chicken and serve it with a big side of greens so that you don't carb overload!!


1 lb of orzo
1/4 cup fresh chopped dill
zest and juice of one lemon
2 lbs feta crumbled
2 lbs chicken pieces
4/3 c water
4 cups chicken broth (i only had beef and that worked fine, too!)
salt pepper butter to taste

- boil the water, broth and condiments
- pour uncooked orzo into a 9x13
-sprinkle dill over
-juice the lemon and sprinkle the zest over the orzo
-crumble your feta on top (if 2 lbs seems like a lot just cover most of the orzo)
-toss your uncooked chicken on top of the feta
-pour boiling liquid over the entire dish

stick in a 400 degree oven for 40 minutes or until chicken is cooked through. it should look something like this:

sprinkle with grated parmesan and serve :D
