Chocolate Banana Bread



Banana bread. The staple that gets me through so many things in life. Husband going to China? Make banana bread. Extended house guest's first day of work? Banana bread. No job? Banana bread. Nervous for an audition? BANANA BREAD. You get the picture. I don't need an excuse for this classic. Just give me the bread.

And God forbid it be dry. I can't deal with that. That is just too upsetting. Do not give me dry banana bread.

There's a banana muffin recipe floating around here somewhere that I am very proud of. It is no where close to dry. That is why I am proud, you see.

And happily, I now bring to you my new chocolate banana bread recipe. Truly moist and pretty delicious. And suitable for any emotion.

What's your go-to baked good? And has anyone heard about the potential for bananas to be extinct in ten years? WHOO that makes me upset!! Quick!! Start a banana farm!!!!!

Chocolate Banana Bread

1 stick of butter, softened
1 c sugar
2 eggs
3 bananas, ripe, mashed
3 tbs milk
1 tsp vanilla extract
1 and 3/4 c flour
1/2 c baking cocoa
1 tsp baking soda
1 tsp salt
1 c chocolate chips (I used 60% chocolate)

-Preheat oven to 350 and grease loaf pan. Combine butter, sugar, eggs, bananas, vanilla, milk and vanilla in a mixer on medium speed until incorporated. Lumps are ok!
- Stir the dry ingredients together with a fork in a medium sized bowl and slowly add to mixer to incorporate. Fold in chocolate chips and bake for 45-50 minutes or until a cake tester comes out clean. Tent with foil for the last 10-15 minutes if the top appears to be browning quickly.

  1. What? Bananas extinct? No no nooooooooo! Your recipe sounds great, by the way, and I agree with you on the dry thing. My go-to bread is pumpkin with chocolate chips. You're supposed to drop a handful of chips in the batter; I pour most of a bag, because I don't like pumpkin, and I need that chocolate to overwhelm the pumpkin flavor. My low-fat chocolate chip pumpkin bread isn't quite guilt-free, but it gets some veggies in my veggie-hating husband, and it gets more chocolate in me!

  2. Apparently there is some dread banana disease sweeping through the trees, expected to reach S. America in 5 years! But the real problem - they've been mutated so much, there are not an adequate amount of seeds left to reproduce the trees as fast as the disease is getting to them! I hope this is all false information.

    I can't believe you don't like pumpkin! I LOOOOOVE pumpkin!!!!! :D

  3. Confession: there are exactly three food items I don't care for: olives, bleu cheese, and bananas. BUT I love banana bread, and this looks spectacular!!

    I can't say I have a "go-to" baked good to eat, (I'll eat any baked good, really) but I do have a go-to baked good to make. There's a recipe that takes about seven minutes to whip up (not including baking time) that is fool proof, versatile, and a shockingly successful crowd-pleaser -- I discovered a praline-topped blondie last fall that is just spectacular. Topped with an irresistible glaze and chopped pecans, they're fabulous and also mail really well. It's definitely my go-to in case of dessert emergencies (last-minute potluck, office dessert shortage) because it's fast and easy, and I almost always have the ingredients on hand.

  4. I wanted to write something funny about chocolate bananas but couldn't come up with anything appropriate for the dinner table. And that would never do with this delish banana bread sitting there in wait for a big glass of milk and my appetite.
