blackberry peach crisp with oat flour


guys. i am freaking out over here! i have no kitchen and it is eating away at my soul.

not dramatic at all.

but for real.

i might have packed a good many kitchen utensils in my suitcase but it's not helping me right now with the lack of an oven.

so, the kitchen piracy continues... whose kitchen is next?? ...

here's a recipe from last week that my friend lindsey and i put together in five minutes. after much deliberation over going to the gas station for ice cream or not, we decided not. we couldn't be bothered with such frivolities. it was at this point that we realized we could make something pretty fast. and we did. and it was delicious. we saw a recipe similar to this one on yummly and made a few changes.

it's seriously the easiest thing in the world. almost embarrassing.

but i like this so much i might make something very similar to it tomorrow when i steal a new kitchen. you'll have to wait to see! after much beethoven five and another orchestra concert tomorrow, i sleep.

blackberry peach crisp
serves 4

oil (cooking spray)
1 cup blackberries
1 cup chopped peaches
2 tsp orange marmalade
2 tsp water
1/2 tsp vanilla
3 tbs oat flour
3 tbs oats
2 tbs brown sugar
1 tbs olive oil
1 tbs honey
1 tsp cinnamon

- spray or coat 4 ramekins and preheat the oven to 375. mix together berries in a small bowl. combine marmalade and water to mix with fruit and vanilla and divide into dishes.
- combine remaining ingredients and evenly distribute as a topping over the fruit. put on a baking sheet and bake for 15 to 20 minutes or until bubbly. serve warm... with ice cream!!!
